Job description
THE EMPLOYER IS: HILTON BELFAST As a Commis Chef, you will play a key supporting role within the kitchen team by delivering high-quality food preparation, consistent presentation, and excellent hygiene standards. Working closely with senior chefs and wider culinary colleagues, you will contribute to smooth kitchen operations, timely service, and adherence to all food safety and brand standards. You will be an enthusiastic and proactive team member, keen to develop your culinary skills while contributing to a fast-paced, high-pressure kitchen environment. With a commitment to quality, attention to detail, and a strong work ethic, you will help ensure an exceptional dining experience for our guests.
Responsibilities
- Cooking techniques - mastering methods for frying, grilling, baking, and sautéing according to professional standards.
- Plating and presentation - learning artistic presentation, portion control, and consistency across all dishes.
- Recipe adherence - accurately following recipes and menu specifications while maintaining quality.
- Time management in kitchen operations - coordinating multiple dishes simultaneously to ensure timely service.
- HACCP and food safety compliance - learning hazard analysis and critical control points in daily operations.
- Safe food handling - temperature monitoring, correct storage, rotation, and preparation techniques.
- COSHH awareness - safe use of cleaning chemicals and understanding chemical hazards.
- Kitchen hygiene practices - maintaining cleanliness to statutory and brand standards.
- Allergen awareness - identifying, managing, and preventing allergen cross-contamination.
- Assist with stock monitoring and rotation (FIFO).
- Support portion control and accurate plating.
- Help reduce food waste while maintaining quality.
- Operate kitchen equipment safely (ovens, grills, mixers, slicers).
- Maintain clean and organised workstations.
- Follow hygiene and safety standards at all times.
- Prepare ingredients and dishes according to recipes and SOPs.
- Monitor food quality for taste, texture, and presentation.
- Follow hotel/brand standards consistently.
- Receive feedback and implement improvements under supervision.
- Assist senior chefs and support smooth kitchen workflow.
- Coordinate with colleagues for efficient service.
- Learn to manage time and tasks effectively in a busy environment.
Skills and Qualifications
Essential Skills
- Culinary Skills - Ability to prepare and cook dishes using basic techniques (frying, grilling, baking, sautéing) while following recipes accurately.
- Food Safety & Hygiene - Knowledge of HACCP, safe food handling, allergen management, and maintaining high kitchen hygiene standards.
- Time Management & Organisation - Ability to manage multiple tasks and coordinate preparation to ensure timely service.
- Attention to Detail & Quality - Ensuring dishes are plated consistently, meet brand standards, and maintain high quality in taste, texture, and presentation.
- Teamwork & Communication - Supporting senior chefs and colleagues to maintain smooth workflow and effective kitchen operations.
Desirable Skills
- Basic Cost Awareness - Understanding portion control, stock rotation (FIFO), and supporting waste reduction.
- Learning Agility - Willingness to receive feedback and implement improvements under supervision.
- Exposure to Menu Support - Assisting with specials or ingredient prep for seasonal dishes.
- Cross-Functional Collaboration - Supporting coordination with front-of-house and other kitchen teams to enhance service efficiency
