Job description
Commis Chef (full-time with experience). As a qualified Commis Chef you will assist the kitchen brigade with tasks related to mise en place, meal preparation, meals service, portion & stock control, food hygiene and health & safety and working in all sections of the kitchen.
Responsibilities
- Prepare, cook & present hot & cold dishes and sauces according to hotel standards.
- Ensuring you have high standards of food hygiene and follow the rules of health and safety.
- Wash, chop, and cut fruit, meat, and vegetables.
- Measure, mix, and prepare meal ingredients, sauces, and seasonings.
- Prepare and serve on carvery/banquets.
- Plate meal items under the chef de partie’s supervision.
- Continually develops culinary knowledge to produce high-quality meals.
- Inventory Management: Handle kitchen deliveries, unpack orders, and enforce proper stock rotation
- Monitors kitchen equipment and reports issues to superiors.
- Waste Reduction: Minimize food waste through careful storage, precise portion control, and regular checks on expiration dates
Skills and Qualifications
Essential Skills
- Good communication skills.
- Industry recognised Hospitality and Catering diploma or other qualification e.g. L2 NVQ Professional Cookery Accreditation, City and Guilds diplomas in professional cookery, BTEC HND in professional cookery, foundation degree in culinary arts.
- Experience assisting in the food preparation process.
- Ability to produce good quality basic food items, sauces & stocks.
- Experience of kitchen equipment.
- Experience and working knowledge of dangerous equipment such as knives/ slicers.
- Experience assisting other chefs and working as a strong team member.
- Experience in cleaning as you work.
- Fluent in English in order to follow Health & Safety procedures.
- Capable of meeting the physical demands of the job as some heavy lifting involved.
Desirable Skills
- 1 to 2 years' of work experience in a similar role.
- Excellent communication skills.
- Computer literacy skills.
- Level 2 Health and Safety in the Workplace Award.
- Level 3 Food Safety Awards.
- Ability to work unsupervised and deliver quality work.
- Breakfast prep and service experience.
- Cooking and preparing elements of high quality dishes.
- Adaptability to change and willingness to embrace new ideas and processes.
- Experience helping with deliveries and restocking.
- Experience assisting with stock rotation.
