Job description
Experienced Senior Sous Chef required to help ensure the smooth running of the kitchen.
Responsibilities
- Support Head Chef managing the kitchen.
- Deputise for Head Chef in his absence.
- Manage kitchen staff, including rota, disciplinary & HR issues in the absence of Head Chef.
- Supervise food preparation.
- Lead chefs in cooking & preparing meals, including checking food quality & overseeing cooking techniques.
- Prepare & cook food (hands on role).
- Take responsibility for more technical elements of cuisine.
- Induct new employees.
- Train junior chefs.
- Design / help Head Chef create menus.
- Work within specified budgets.
- Order supplies & negotiate with suppliers.
- Ensure kitchen meets high quality standards.
- Complete food hygiene documents to comply with the law & write environmental health reports when necessary.
- Establish strong relationships with staff in other areas of the business, including managers and front of house teams.
- Organise produce & ensure strict adherence to food hygiene regulations.
Skills and Qualifications
Essential Skills
- Permitted to legally live & work in Northern Ireland/UK (evidence of immigration status & right to work with ID).
- Good standard of education.
- Professional Chef/Culinary qualifications.
- Previous experience of the role in a busy hotel environment.
- Current L3 Supervising Food Hygiene certification.
- Working knowledge of managing HACCP procedures.
- Imaginative cooking skills with an eye for detail.
- Ability to manage budgets with good negotiation skills.
- Excellent timekeeper, with flexibility.
- Excellent communication skills for problem solving.
- Excellent customer care skills.
- Mentoring and training ability.
- Resilience & composure with the ability to stay calm, focused, and positive under extreme pressure during busy services.
- Excellent leadership and team development skills.
Desirable Skills
- Previous working experience of a similar role within a similar hotel environment.
- Progressive experience in high-volume or fine dining environments, with proven supervisory or management experience.
- Ambition to build on the existing reputation of our Killyhevlin kitchen and raise our profile to award winning.
- Creativity & passion with a genuine passion for food and culinary trends, paired with the flair to innovate and elevate the menu.
- Commercial awareness with an eye for detail regarding business costs, waste reduction, and labour efficiencies.
- Extensive knowledge of the hospitality and catering industry.
- Strong leader with exceptional people management and diplomatic skills to motivate the team, resolve conflicts, and command respect.

Work time: Shifts according to business includes weekends. We are an Equal Opportunity Employer.
